kale and beet calzone


Farm season is upon us and this beauty contains all farm vegetables! A garlic scape, herb, and nut pesto anchored this calzone which was also filled with scallions, steamed kale and shredded beets. This was a great calzone, a 9! The only thing I'd changed is add more shredded beets. We grilled beets the night before so only had one left to shred into these 2 calzones and it would have been nice to have twice as much.

kale and tofu calzone


Mmmmm, such a tasty calzone. The filling which I sauteed before stuffing in the whole wheat dough consisted of the following:
  • olive oil
  • onions
  • garlic
  • tofu
  • herbs (oregano, thyme, basil)
  • lemon juice
  • nutritional yeast
  • salt
  • kale
I also added kalamata olives to my calzone, K has no clue what he is missing... After baking we topped our calzones with marinara sauce and K added some red pepper flakes (I passed on those today.) Delicious!

Sweet & Spicy Hawaiian Seitan Pizza


As is standard lately, I started with a whole wheat crust - maybe next time I'll make a different crust. The Sweet & Spicy Seitan sauce had most the toppings directly in it. That included onion, bell pepper, seitan, and kale. I topped that sauce with some chunks of pineapple. And as always passed the red pepper flakes (did skip the nutritional yeast this time although it probably would have tasted fine.)

We decided to start rating our pizza on a 10 point scale. 10 being "Wow, I could eat this every day" and 1 being "Yuck, I couldn't even finish eating this one piece." This one gets a 7.5. The sauce was a little juicy (I should have thickened it) but the flavor was delish. Tempeh would be a great texture on this one in place of the seitan if only K could eat tempeh again . sigh...
